Fabulous Food: July 4th inspired Eton Mess


I had never tasted Eton Mess until we visited England two years ago.  My friend Victoria made it for us one evening while we were dining in her garden.  It was soooo good! and soooo simple to make! - two of my favorite things : )   The three main components were meringue cookies, crème fraîche and blueberries.  Traditional Eton Mess is made with strawberries, so I thought I would combine the traditional recipe with Victoria's inspired choice to make a true red, white and blue dessert for July 4th.

This dessert is light and airy - a perfect choice for a warm summer evening.  Hope you enjoy!







Eton Mess: serves 4

3 cups of strawberries & blueberries mixed
3-4 teaspoons sugar or vanilla sugar, if available
4 ozs whipping cream
4 ozs crème fraîche
2 Tbsp caster sugar (or confectioner's sugar if you can't find caster sugar)
6-8 meringues (or 4 small meringue nests)

1. Rinse, hull and cut strawberries into small pieces. Combine strawberries and blueberries with the 3-4 tsps of sugar in a bowl and set aside to macerate.

2. Whip whipping cream until it has soft peaks, and then add the caster sugar so the whip cream is lightly sweetened.  Fold in the crème fraîche.

3. Break apart the meringues until there is a mix of small and medium pieces.  Softly mix the meringues into the whip cream mixture.  Scoop the meringue mixture into individual serving dishes.

4. Top with the macerated berries.  I also added a little more whipped cream and about a tablespoon of the meringue crumbles. 


***My Eton Mess turns out a little less messy than traditional Eton Mess.  You can mix your macerated berries into the meringue mixture if you would like.  I just like mine on top : )
